The mechanics of midnight

Every dessert or digestif order after 22:00 earns a ballot — printed, numbered, dropped into the sealed box at the pass. At 00:00 the floor manager breaks the seal in front of whoever is still awake, spins the wheel, and calls the number.

The prize rotates nightly: a dessert flight for the table, a 30ml pour of the 30-year Hardy, the chef's off-menu plate, or on milestone nights a A$500 chip float. The wheel is witnessed, the result announced, and the whole thing takes ninety seconds — the house goes quiet for it.

The night it landed on zero twice

In March the wheel hit zero — house number, meaning the prize doubles and rolls to the next ballot — then hit it again. The room's reaction convinced us to make double-zero nights a permanent fixture: they now carry the progressive pot.

That pot currently sits at A$284,650 in the lounge display — the night's draw plays against it in miniature, which is why the countdown matters.

How to actually win it

There is no strategy — it is a lottery — but there is positioning. Ballots accumulate per order, so a table that paces its desserts across the evening holds more numbers than one that orders once.

The unwritten edge:

• Order across the evening, not in one block — ballots are per order.
• Be physically present at the call — unclaimed numbers roll over.
• Members' ballots are printed gold and count double on Fridays.
